  • 2 Cups All Purpose Flour
  • 2 Teaspoons Baking Soda
  • 1/2 Teaspoon Salt
  • 2 Teaspoons Cinnamon
  • 1/2 Teaspoon Ground Nutmeg
  • 1/2 Teaspoons Ground Ginger
  • 1 Cup Granulated Sugar
  • 1 Cup Lightly Packed Brown Sugar
  • 1 Cup Vegetable Oil
  • 4 Large Eggs
  • 2 Teaspoons Pure Vanilla Extract
  • 3 Cups Grated Carrots

Cream Cheese Icing Ingredients

  • 1/2 Cup Unsalted Butter
  • 8 Oz Cream Cheese
  • 4 Cups Powder Sugar
  • 1 1/2 Teaspoons Vanilla Extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, sift together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. Set aside.
  • In another bowl, beat together the granulated sugar, brown sugar, and vegetable oil until well combined. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the grated carrots until evenly distributed throughout the batter.
  • Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
